Mirzam Chocolate tour
Located in Al Quoz 3, a little chocolate factory (including cafe and shop) has arised. We booked a tour and workshop and made our own chocolate bars (all together 180 Dirhams). We experienced every aspect of chocolate making at this cute (and modern) chocolate factory, from roasting the cocoa beans to hand wrapping each bar.
INSPIRED BY THE SPICE ROUTE
The single origin cocoa beans have been chosen for the diverse flavours (you can experience when tasting) and the rich heritage, located along the maritime Spice Route, that traders sailed hundreds of years ago to gather valuable ingredients to sell on to European buyers. The single origin collection is crafted from beans originating from Vietnam, Indonesia, Madagascar, Papua New Guinea and India.
BEAN TO BAR CHOCOLATE
Using granite wheels, the roasted beans are ground for several days in a process which slowly decreases the molecule size to create incredibly smooth chocolate with no need for additional additives.
The workshop
Step 1
The melted chocolate is poured into the mold and we can add ingredients such as pistachio and hazelnuts. We used a spoon to smooth out the chocolate as much as possible. This has to be done quickly because the chocolate hardens quickly. Then the chocolate goes into the fridge to harden. We made each three bars.
Step 2
We made each three chocolate wrappers. We used colored pencils and watercolors.
Step 3
The chocolate is ready and it's time to push the chocolate carefully out of the mold and make three bars out of it. All edges must be carefully broken off. We then wrap the chocolate in special aluminum foil and then in our homemade paper wrappers. Finished! We went home with 12 bars!!
